“Baked” Cinnamon Apples

Growing up in the south, I loved the occasions when we would go to Cracker Barrel to eat. It was always such an experience, but my favorite thing was getting the fried apples. Eating those apples while trying to conquer the peg game was just the best.

Now that I’m all grown up, I still really love fried apples, but I’m also far less patient (if I ever was patient to begin with) and I prefer food that doesn’t require a long wait before I get to eat it. True baked or fried apples take a long time to get just right, and I’m not about to do that in the mornings while everyone is rushing to get for school.

I love that this recipe is basically done in 5 minutes and it has all that tender, sweet, deliciousness that I love but in a fraction of the time. It’s not an exact duplicate of the Cracker Barrel stuff, and honestly, that’s okay since I doubt they use minimal ingredients that are clean to boot.

These apples are the perfect side dish for breakfast any day of the week, or even as a compliment to Pork Loin for dinner. You’re a grown up, that means you can eat what you want when you want, you don’t have to conform to social breakfast norms 😉

"Baked" Cinnamon Apples

Yield: 1 serving
Prep Time: 2 minutes
Cook Time: 2 minutes
Total Time: 4 minutes

Ingredients

  • 1 Apple, of your choice
  • 1/2 Tbsp Coconut Oil
  • 1 tsp Ground Cinnamon
  • Dash Ground Nutmeg

Instructions

  1. Using an apple slicer (or a knife), cut your apple into wedges. You can either peel it before or after (I prefer after). Cut wedges in half or thirds to make bite-size pieces.
  2. Put the coconut oil in the small bowl (I use a Pyrex dish with a lid for this) and microwave it for about 15-20 seconds until it's melted.
  3. Place apples and all other ingredients into the glass bowl. Mix it around to coat the apples with the spices and oil.
  4. Place the lid or plastic wrap on the top of the bowl. Leave a small vent open for steam to escape.
  5. Microwave on HIGH for 2:15.
  6. Be very careful removing the bowl from the microwave. It will be extremely hot and there will be steam. Use potholders here, it really helps.
  7. Give everything a quick little stir, let them cool a minute or two (so you don't burn your tongue) and eat warm.

I agree with Rose, way too much cinnamon. I made them once as specified and it was bitter. I made it again with about 1/3 teaspoon of cinnamon instead and it was delicious.

This was way too much cinnamon for one Apple. Mine came out all pottery and dark. I will cut it down by the third the next time. Had to throw all the apples out.

why throw out what you cooked? just cook more apples without the cinnamon and stir them into the first batch. waste not want not.

I use about a tsp of real butter and leave on the skin baking it in my mini crock with lid. Sprinkle cinnamon, clove, all spice and salt. Just a pinch of each delicious.

I used a very small amount of unsalted butter because I didn't have any coconut oil.

I would like to start the whole 30 . I am trying to lose weight and I was told my blood sugar was high. Will this be a good diet for me? Just want to make my blood sugar stays stabilize. I am NOT a diabetic. Is there a book I can buy for meal plans, do's and don't on this whole 30 plan. And list of foods to eat and recipes?

Thank you! This was really good and SO easy! Satisfied the urge for something sweet without breaking any rules. I doubled the recipe for two and served it twice with our pork chops. The second time, I added 1/4 tsp of salt (to two servings) to bring out more of the apples' sweetness, and I thought it was even better that way. I'm a salt-a-holic though, so YMMV. I'm sorry I didn't see the comments about adding some shredded coconut, because I had it on hand. Oh, well, next time!

By the way, I bet covering the bowl with a plate or using a glass casserole with a tight-fitting lid would work nearly as well as plastic wrap, for those who are concerned. My guts are probably 99% plastic already from all the times I cooked in it before we all knew better, so I didn't even think twice about using it to cover the bowl. I'll try it with a lid or plate next time.
