Crispy Bacon Broccoli – Paleo & Keto

When I first had kids, I never imagined the following conversation would take place in my kitchen:

R: “What are you making mom?”
Me: “Broccoli.”
L: “Ooh, broccoli! Are you making enough for us?”
K: “I want some.”
Me: Puts some broccoli on their plates when it’s ready
All of them: “This is so good, mom!”

Seriously, they weren’t sucking up for anything, either. They genuinely liked it. Now, this really isn’t a surprise at this point in our lives, but even 5 years ago, this would have been hard for me to believe. It’s just more proof to me that kids don’t inherently hate veggies, they are a product of their upbringing and environment. Children who are fed real food and not processed “food” tend to sincerely love vegetables.

I also mentioned that their environment has something to do with it as well. When we visit our kids at school to join them for lunch, I’m shocked at what is often in the other kids lunchboxes (or school lunch trays, for that matter). When I send my kids to school with a pile of carrots and their friends are pulling snack-size candy bars out of their lunch box, that can be a hard battle to win. As parents, we need to be proactive in not only providing healthy food to our kids, but also in teaching them why we do and eat the things we do. I wouldn’t blindly follow some “diet” with no information, and wouldn’t expect my kids to do the same. If they’re informed, they feel a sense of power and are more than willing to make the right choices. Knowledge is power 😉

So all that said, this is like the most simple broccoli recipe ever and I swear your kids will love it. You know why? Bacon, of course. While there isn’t actually any bacon in the broccoli, it is cooked in reserved bacon fat (don’t ever toss your bacon grease, ever!) which adds a flavor that’s hard to hate. That coupled with a sprinkle of sea salt and you’ll find these little greenies disappear pretty fast. It cracks me up to watch my kids ration their broccoli so they have enough left at the their meal for a “treat”. I love it!

Crispy Bacon Broccoli

Cook Time: 10 minutes
Total Time: 15 minutes

How do you make sure kids will eat all their broccoli and not feed it to the dog? Cook it in bacon, of course! This super simple side dish will get gobbled up in no time, guaranteed.

Ingredients

  • 6 cups Broccoli Florets, bite-size
  • 3 Tbsp Bacon Fat
  • Sea Salt, to taste

Instructions

  1. In a large skillet (either non-stick or stainless is fine), melt the bacon fat over medium-high heat.
  2. Add the broccoli and stir to coat all of it with the melted fat. Continue cooking, stirring occasionally to prevent burning and to cook evenly.
  3. When some of the broccoli (not all) is crispy and browned, remove from heat and season with salt, to taste. Serve hot.

I did this and it was slimy and greasy. I think I'll just steam my broccoli in the micro from now on.

I am just loving the combination of crispy bacon in this dish - definitely kicks up the bland flavour of broccoli for sure!
