Fruity Vinaigrette Dressing

I really like making my own vinaigrette dressing. I usually just make it in the bottle and give it a good shake, but I tried it in the Blendtec recently and it made it all creamy and never needed to be shaken before I used it. So that said, I would highly recommend making this in a blender, but it’s not really necessary if you don’t have one.

This dressing tastes pretty freaking great on the Bacon-Chicken Salad, just so you know.

Fruity Vinaigrette Dressing

Yield: 18 servings
Prep Time: 2 minutes
Total Time: 2 minutes

Ingredients

  • 1/2 cup Pomegranate Vinegar (see notes)
  • 1/2 cup Olive Oil
  • 2 cloves Garlic, minced
  • 1 Tbsp Dijon Mustard
  • 1 tsp Sea Salt
  • A few grinds of Fresh Ground Black Pepper

Instructions

  1. Combine everything in a jar and shake it up. If you're using fresh berries, crush them up first. Otherwise, stick everything in your blender and give it a good whirl.

Notes

If you only have a regular vinegar, toss in a few crushed raspberries
