My failure to plan meals this week has really been catching up with me. Luckily, I had a backup plan that involved frozen Mahi Mahi, coconut butter (yum!), cashews, peaches, and tomatillos. Also, this was my first tomatillo experience, and it almost didn’t happen…
No-bake desserts are my favorite. Very little prep time and ready to eat quickly are also bonuses. This dessert is the trifecta with all 3 of those elements. And it’s delicious to boot. What more could you ask for?!
