I had this great idea to make beautiful layered popsicle for the 4th of July. I mean really, how hard could it be? Apparently, kind of hard. Because I failed. And then I realized it was because I was impatient. I have a serious problem with waiting for things, especially food. So when I attempted this recipe as a smoothie (which is delicious!) it was a swirly mess, no beautiful layers. I guess the swirls are pretty in their own right, but it’s not what my goal was so I was disappointed. But then I drank it and it was so good, I didn’t care what it looked like.

So I decided to make some popsicles as well and they turned out better, but had I exercised just a tiny bit more patience, I think they would have been perfect. Also, I apparently can’t eyeball 1/3 of a popsicle mold. Not that it mattered. The kids devoured these suckers, so I don’t think they cared what they looked like either.

So whether or not you decide to make these for your 4th of July celebration, or layer them in a different order, or decide to drink them instead of freeze them, just make them because they taste great and everyone will love you. But they probably love you already because you’re awesome. Yeah, you know you are.

Patriotic Pops

Yield: 9 small popsicles
Prep Time: 30 minutes
Total Time: 30 minutes

These red, white, and blue popsicles are the best way to stay cool at your Independence Day picnic, or anytime you need a tasty way to cool down.

Ingredients

RED LAYER

  • 1/2 Frozen Banana, sliced
  • 1 cup Frozen Cherries
  • 3-4 Frozen Strawberries, quartered
  • 1 cup Almond or Coconut Milk

WHITE LAYER

  • 1 Frozen Banana, sliced
  • 1 cup Unsweetened Shredded Coconut
  • 1 cup Coconut Milk
  • 1/2 cup Ice

BLUE LAYER

  • 1/2 Frozen Banana, sliced
  • 1 cup Frozen Blueberries
  • 1 cup Almond or Coconut Milk

Instructions

  1. Blend all ingredients for the RED layer. Pour evenly into popsicle molds and/or serving glasses, filling the container 1/3 full. Place in the freezer for 10 minutes.
  2. Blend all ingredients for the WHITE layer. Pour slowly and evenly into popsicle molds and/or serving glasses, filling the container 2/3 full. Place in the freezer for 10 minutes.
  3. Blend all ingredients for the BLUE layer. Pour slowly and evenly into popsicle molds and/or serving glasses, filling the container all the way full.
  4. If using popsicle molds, insert the popsicle stick and place back in the freezer for a few hours.
  5. If using as drinks, serve immediately.
