I have always loved cooking and baking, but in early 2013 I set aside the flour, sugar, and milk for healthier ingredients. In addition to creating healthy meals, I also love hiking and camping with my husband and our 3 kids. Sometimes, kids (and adults!) just need some good old comfort food. These mini pizza bites taste just like a pizza, rolled up in one tiny bite-size morsel. The dairy-free version tastes just as cheesy, thanks to the nutritional yeast.
My failure to plan meals this week has really been catching up with me. Luckily, I had a backup plan that involved frozen Mahi Mahi, coconut butter (yum!), cashews, peaches, and tomatillos. Also, this was my first tomatillo experience, and it almost didn’t happen…
