Whole30 Mashed Potatoes

Everyone likes to eat mashed potatoes when we celebrate Thanksgiving or other holidays, but why we can't cook it any day? Delicate, creamy mashed potatoes are an excellent side dish for meat or fish. However, mashed potatoes can be eaten with anything.
This is a simple Whole30 recipe of mashed potatoes that you can make any day, and it doesn't take much time.

Ingredients

  • 500 g Potatoes
  • 2 Cloves of Garlic
  • 1/2 cup Almond Milk
  • Salt and Pepper to taste

Instructions

  • Wash potatoes as well, chop into quarters and put in the pot of water or in your Instant Pot.
  • Chop garlic, add to the pot along with spices (except salt).
  • When potatoes are cooked, drain water, pour potatoes with almond milk, salt and crush with help of potato masher.
  • Garnish your mashed potatoes with fresh herbs and some pepper.

Notes

Never use a blender to make mashed potatoes, you will get super gummy potatoes - this is not tasty.
I like to cook potatoes with skins on, but you can peel potatoes if you want.
To make potato perfectly soft, you should not add salt until it is cooked. Salt makes potatoes too solid and there will be lumps in your puree.
Garlic is optional. I like to add it because it gives an incredible flavor. You can also experiment with herbs and spices for this recipe.
