I had this great idea to make beautiful layered popsicle for the 4th of July. I mean really, how hard could it be? Apparently, kind of hard. Because I failed. And then I realized it was because I was impatient. I have a serious problem with waiting for things, especially food. So when I attempted this recipe as a smoothie (which is delicious!) it was a swirly mess, no beautiful layers. I guess the swirls are pretty in their own right, but it’s not what my goal was so I was disappointed. But then I drank it and it was so good, I didn’t care what it looked like.
So I decided to make some popsicles as well and they turned out better, but had I exercised just a tiny bit more patience, I think they would have been perfect. Also, I apparently can’t eyeball 1/3 of a popsicle mold. Not that it mattered. The kids devoured these suckers, so I don’t think they cared what they looked like either.
So whether or not you decide to make these for your 4th of July celebration, or layer them in a different order, or decide to drink them instead of freeze them, just make them because they taste great and everyone will love you. But they probably love you already because you’re awesome. Yeah, you know you are.
