Gluten Free Italian Meatball Stew is a soup recipe that has been made gluten free by substituting the meatballs for gluten free meatballs. This recipe is perfect for those who are on a strict diet, or just want to eat healthier.

Gluten Free Meatballs (Ingredients Needed)

  • 2 lbs Ground Beef (or half beef, half pork)
  • 2 Eggs
  • 1/3 cup Pork Rind Crumbs (see notes)
  • 3 cloves Garlic, minced
  • 1 1/2 tsp Salt
  • 1 tsp Black Pepper
  • 1 tsp Italian Seasoning

How to Make Gluten Free Italian Meatball Stew

Turn oven on to 425°F. Line a large rimmed baking sheet with foil. If you have a wire rack, place that in the pan (this will keep the meatballs directly off the pans so the grease drips down, but it is not required). Set aside.

Combine Ingredients to make the gluten free meatballs

Combine all meatball ingredients in a bowl and mix together well until fully combined. Using a small cookie scoop (about 1 Tbsp capacity), scoop out the meatballs, rolling each one into a smooth ball.

Prepare the Meatballs

Place meatballs on the prepared baking sheet, evenly spaced. Bake in the preheated oven for 10-12 minutes, or until cooked all the way through.

Prepare the Soup

While meatballs are cooking, prepare the soup. Combine all soup ingredient in the inner pot of the Instant Pot, stirring to mix well. Once the meatballs are done, add them to the Instant Pot and stir to coat them with the stew ingredients.

Easy in the Instant Pot

Place the lid on the Instant Pot and turn the knob to “seal”. Press the Soup setting and let the Instant Pot run the entire cycle, allowing it to naturally pressure release for about 20 minutes after it’s done. Carefully release the rest of the pressure and open the lid.

Prepare Extras (Great Reheated)

Leftovers can be stored in a tightly sealed glass container in the fridge for a week.

Notes

If you don't have (or can't find) pork rind crumbs, put some plain pork rinds in a plastic bag, seal it tight with little to no air inside, and smash them until they are crumbled up small.
