Recipe: Protein Breakfast Cookies {grain-free, egg-free, dairy-free}

These breakfast cookies are our favorite way to eat in the mornings when we're running late and rushing out the door. Hearty enough to fill bellies and packed with protein and everything we need to start the day.

Breakfast Cookies

4 ripe Bananas (the riper the sweeter your cookies will be)

1 Tbsp Maple Syrup (optional)

1-1/2 tsp Vanilla Extract

1 cup Almonds

1/2 cup Pumpkin Seeds

1/2 cup Cashews

1/2 cup Walnuts

4 scoops The Perfect Paleo Protein Powder

1-1/3 cup Unsweetened Shredded Coconut

3/4 tsp Ground Ginger

1 Tbsp Chia Seeds

3/4 tsp Salt

1 cup Raisins (we love golden raisins in these cookies)


1Preheat oven to 350°F. Line a cookie sheet with parchment paper or a silicone baking mat. Set aside.

2In a large mixing bowl, mash the bananas with a fork until mostly smooth and sort of liquidy. Stir in maple syrup and vanilla extract. Set aside.

3In a blender or food processor, add almonds, cashews, and walnuts. Pulse just enough to coarsely chop them, you want some largish pieces.

4Add the mashed bananas, Perfect Paleo Powder, pumpkin seeds, shredded coconut, ginger, chia seeds, salt, and raisins. Pulse a couple times to combine. You can finish combining with a spoon or spatula so you don't chop up everything.

5Using 2 spoons or a large cookie/ice cream scoop, drop approximately 3 Tbsp of dough onto prepared cookie sheet, 2" apart. Slightly flatten with the back of a spoon or dampened fingers. They will not spread while baking.

6Bake in preheated oven for 12-15 minutes, or until mostly set in the middle. Remove cookies from baking sheet and let cool on a wire rack. They will still be soft and easy to break but will firm up as they cool.

7Store in an air-tight container at room temperature for up to 1 week.
